Kimchi is a traditional side dish from Korea made from salted and fermented cabbage. Kimchi is available in the refrigerated section of the Asian grocer and selected supermarkets.If required, keep chicken warm in the oven at 150°C while frying batches. Re-whisk batter between batches to ensure an even batter to coat.

Method

STEP 1
Combine yogurt and kimchi. Divide mixture in half. Marinate wings in one half of kimchi yogurt mix for 30 minutes or overnight, if time permits.


STEP 2

Place rice flour in a bowl and season with salt. Gradually whisk in 1 cup cold water until a smooth batter forms. Remove chicken wings from marinade and discard any excess marinade.


STEP 3

Heat a large frying pan with a layer of oil. Dip wings into batter, draining any excess batter and place in pan. Cook, in batches, turning, for 10 minutes or until wings are cooked through.


STEP 4

Serve wings topped with remaining kimchi yogurt and spring onions.
