Ingredients

  • 200g grated orange sweet potato (kumera) or pumpkin
  • 1 spring onion, chopped
  • 1 teaspoon ground cumin
  • ¼ cup self-raising flour
  • 1 teaspoon salt
  • freshly ground black pepper, to taste
  • 2 eggs
  • olive oil, for frying
  • 1 cup Farmers Union Greek Style Natural Yogurt
  • ½ cup finely chopped coriander leaves
  • extra coriander, for garnish

Method

STEP 1
Combine sweet potato, spring onion, cumin, flour, salt, pepper and eggs together.

 

STEP 2
Shallow fry small spoonfuls of mixture in hot oil for 2 minutes on each side until golden. Drain on absorbent paper.

 

STEP 3
Meanwhile, combine Farmers Union Greek Style Natural Yogurt with coriander and season to taste. Serve fritters dolloped with Coriander Yogurt.
