Southern Baked Chicken with Lemon Aioli

Cajun seasonings vary in strength and heat. Please adjust to your desired taste. We used a mild Cajun seasoning for this recipe.
Combine Farmers Union Greek Style yogurt with Cajun seasoning in a large bowl. Add chicken drumsticks and toss to coat in yogurt mixture. Allow to marinate in the refrigerator for 1 hour or as time permits.
Preheat oven to 220°C (200°C fan forced). Remove chicken from marinade and discard remaining yoghurt. Coat the chicken in the cornflake crumbs until covered.
Place on a baking tray lined with baking paper. Spray with cooking oil spray and bake for 25-35 minutes or until chicken is cooked through.
Make Lemon Aioli by whisking together yolks, garlic and lemon zest. Stir in yogurt and season to taste. Serve with lemon aioli.
