Method

STEP 1
Preheat oven to 200°C (180°C fan forced). Combine yogurt and chipotle powder. Divide mixture in half. Marinate thighs in one half of yogurt mix for 30 minutes or as time permits. Place chicken in a single layer on a baking tray lined with baking paper.


STEP 2

Combine black beans and nacho topping in a small bowl. On a separate baking tray, lined with baking paper, spread over corn chips. Spoon beans over chips and dollop with remaining chipotle yogurt.


STEP 3

Place both trays in the oven and cook for 10 minutes or until chicken is cooked through and corn chips are browned. Top corn chips with cooked chicken, avocado and coriander.

Tips

Chipotle powder or seasoning is available in the Mexican or spice section of the supermarket. If unavailable, Mexican chilli powder is a good substitute if you like it hot, otherwise Taco Seasoning is another alternative.
