Hot Smoked Trout with Zucchini Noodles

You can use a combination of vegetable such as zucchini, pumpkin, parsnip or even carrot.Substitute the hot smoked salmon for regular smoked salmon or even canned tuna.
Heat oil in a large frying pan over medium heat. Add onion and garlic to pan and cook for 2 minutes or until just starting to soften. Add asparagus and wine and cook for 1 minute or until asparagus is just tender.
Stir in zucchini and smoked salmon and heat through until zucchini is just soft. Remove from heat.
Spoon in yogurt, dill and lemon juice and stir through. Season to taste with salt and pepper. Serve immediately.
