Method

STEP 1
Heat oil in a large frying pan over medium heat. Add onion and garlic to pan and cook for 2 minutes or until just starting to soften. Add asparagus and wine and cook for 1 minute or until asparagus is just tender.


STEP 2

Stir in zucchini and smoked salmon and heat through until zucchini is just soft. Remove from heat.


STEP 3

Spoon in yogurt, dill and lemon juice and stir through. Season to taste with salt and pepper. Serve immediately.

Tips

You can use a combination of vegetable such as zucchini, pumpkin, parsnip or even carrot. Substitute the hot smoked salmon for regular smoked salmon or even canned tuna.
